He would always rave about the key lime pie there—the perfect balance of tangy lime zest, sweet condensed milk, and a buttery graham cracker crust. KEY LIME PIE OVERNIGHT OATS:
Ingredients:
½ cup cottage cheese
½ cup almond milk, unsweetened
1 tbsp maple syrup
1 tsp lime juice
½ tsp lime zest
¼ tsp vanilla extract
⅛ tsp sea salt
1 tbsp chia seeds
½ cup rolled oats
½ cup Greek yogurt
¼ cup graham crackers, crushed
Preparation:
In a blender, combine cottage cheese, almond milk, maple syrup, lime juice, lime zest, vanilla extract, and sea salt. Blend thoroughly.
In a bowl, combine the blended liquid with chia seeds and rolled oats.
Let the mixture sit for five minutes to allow it to thicken.
Transfer the mixture to a jar, and top with Greek yogurt and graham crackers.
